The All-Goa Baker\u2019s and Confectioners Association applied with the Department of Science, Technology, and Waste Management of the Government of Goa facilitating the process.<\/p>\n<h2>About Dodol<\/h2>\n<table style=\"width: 100%; border-collapse: collapse; border-style: solid;\">\n<tbody>\n<tr>\n<td style=\"width: 26.1029%;\"><strong>Aspects<\/strong><\/td>\n<td style=\"width: 73.8971%;\"><strong>Description<\/strong><\/td>\n<\/tr>\n<tr>\n<td style=\"width: 26.1029%;\">About<\/td>\n<td style=\"width: 73.8971%;\">Dodol is a traditional<span style=\"color: #ff0000;\"> Goan sweet treat<\/span> which is dark brown and made from rice flour, coconut milk, and black palm jaggery.<br \/>\nIt has a firm, jelly-like texture.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 26.1029%;\">Special method of preparation<\/td>\n<td style=\"width: 73.8971%;\">1. It is made through special procedure where <span style=\"color: #ff0000;\">rice flour, coconut milk, and black palm jaggery is mixed and mixture is cooked \u00a0in a copper pot<\/span>, stirring constantly with a wooden spoon to prevent burning.<br \/>\n2. The cooked mixture is poured into a ghee-greased dish. Then flattened with banana leaves. When it cooled down it is cutted into thin slices.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 26.1029%;\">Cultural significance<\/td>\n<td style=\"width: 73.8971%;\">Traditionally made by <span style=\"color: #ff0000;\">Christian families during Christmas for &#8216;consoada<\/span>,&#8217; a tradition of sending sweets to relatives and neighbors.<br \/>\nIt is a common belief that a<span style=\"color: #ff0000;\"> Catholic woman should take back Dodol and bananas as a gift when she returns to her husband\u2019s house after the birth of her first child<\/span>.<br \/>\nTraditionally prepared in a large pot called \u2018kail,\u2019 which is part of the dowry. If borrowed, it must be returned filled with Dodol as a gesture of gratitude.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 26.1029%;\">Historical Origins<\/td>\n<td style=\"width: 73.8971%;\">1. Some believe <span style=\"color: #ff0000;\">Dodol was served at royal banquets in the Medang Kingdom of Indonesia between the 8th and 11th centuries<\/span>.<br \/>\n2. Another version likely came from early 20th century Indonesia during Dutch colonial rule.<br \/>\n3.
