I am a UPSC aspirant. Started preparation from this month. I am an engineering graduate. Which subject will be better to start preparation. also any suggestions on optional.
I would suggest starting with Polity and Economy side by side. These subjects will help you build a strong base and you will be able to understand the newspaper better. You can always switch it up later.
Also, it helps that polity has one book which covers a majority of things.

You have little choice beyond Polity and Economy. Not only because they are the basic building blocks, but more than that because they are the easiest to do self study.
Please remember that Polity , Economy and History and most self study friendly, which is why you should ( and you will do these subjects ) first. Its a downhill journey from there as far as self study is concerned when it comes to things like Geography, or GS IV , which will require you to eventually seek some class notes of teaching.

I would rather advise to start with Modern History as there is not much to understand there and the story consumes you.
Rather than starting from Polity, I would advise starting with Basic Civics NCERT of class 10th and History.
Economics - should not be in first two IMHO.

And I can tell you that Geography beyond the Go Cheng Leong is difficult to grasp for most people.

And I can tell you that Geography beyond the Go Cheng Leong is difficult to grasp for most people.
Which is why I recommend not Go Cheng but basic NCERT. One cannot discount the importance of these basic books.
I, for one, have never referred to Go Cheng - even for the climatic regions. 11th NCERT solely has been my base.
Anyway, having a science background - physical Geo is easy to grasp.
What would you suggest as a basic read for Economics ?
Read NCERTs onlyyy.
Start with one of your most liking (generally political science/polity ncerts are good to read for freshers). Along with that take one subject of which u feel u like less but important for CSE (History or Geography). I will suggest Themes of Indian history 3 ncert books as they will reduce your fear about history.
Apart from this start reading TH or IE newspaper regularly. Economy / IR / Environment etc base will start building from it as per current issues in news.
DON'T BUY BIG BOOKS NOW ONLY.
LASTLY A FINAL SUGGESTIONS:
Rather than wasting a lot of time over which one is best subject to start with etc - start reading any subject NCERT you like. Just ensure one thing whatever you start, you do finish its full reading before moving to new one. MAKE IT A SELF PROMISE IF YOU WANT TO CLEAR CSE Early !!
